Sunday afternoon and what's to eat..


I'm not a vegetarian..not even close, but occasionally I like to feel like I'm eating healthy and make one of my dear friend Sharons recipe for veggie pizza. Keep in mind you can use any combo of your favorite veggies these are just the ones I like.


1 -tube 13.8 oz. pillsbury classic pizza (usually in dairy case with crescent rolls)
1 -1.0 oz package Hidden Valley Ranch dips mix
1 -8 oz package Philadelphia Brand Cream Cheese ( I used 1/3 less fat..more healthy lol)

2 TBS. Mayo
2 small bunches of broccoli
handful of petite carrots sliced
1/2 medium green pepper diced
1 cup shredded cheddar cheese
1/2 small jar sliced spanish olives

Mix cream cheese,mayo and half the package of hidden valley ranch until well blended, set aside in the refrigerator until ready to use.

Bake pizza dough according to directions... 425 degrees for about 8 minutes. Make sure to poke some holes in the dough to keep it from getting huge bubbles (lesson learned) Set aside to cool.

While crust is cooling chop all veggies. When the crust is cool, spread with cream cheese mixture. Top with your chopped veggies...make sure you take your "clean" hands and press the veggies into the cream cheese mixture...makes them stick better and you don't end up with a lap full of veggieness. Top with cheddar cheese and cover with plastic wrap and keep in the refrigerator for about an hour to let the flavors meld ;)

These can be cut up into small pieces if you are having a party. They make an awesome appetizer or like me, cut in big pieces and try to consume the entire thing in one afternoon...hey, it is 1/3 less calories right?!! Notice I got out the good china for this photo =D
